Almond Shortbread Thumbprint Cookies

(gluten free, low sugar)

15 cookies @ 70 calories per

 

Cookies dough:

1 cups almond flour

3 Tbsp. butter, unsalted at room temperature

3 Tbsp. powdered sugar

1/8 tsp. salt

1/2 tsp. almond extract

Choice of jam or preserves

 

OPT: Glaze: 1/2 cup powdered sugar, 3/4 tsp. almond extract, 1 tsp. milk

 

Preheat oven to 350 degrees. In a medium bowl, combine almond flour, butter, sugar, salt and almond extract. Roll in 3/4 inch size balls. Press an imprint in the center of each one and fill with your choice of jam. I used cherry preserves.

 

Bake 8-10 minutes until lightly browned. Cool 3 minutes on cookie sheet before moving to the cooling rack.

 

If desired, combine glaze ingredients and place in a ziplock. Cut a small tip off of the corner and glaze tops of cookies.
