Basic Bagels--for Bread Machine 

10 Bagels

 

Bagels just seem to be the perfect bread! They’re a bit of work, but split, toasted and topped with apple butter—-YUM!!

 

1 1/4 cups warm water (105-115 degrees)

3 cups bread flour

3 1/3 Tbsp. brown sugar

1 tsp. salt

2 1/2 tsp. Red Star dry yeast

 

Pot of boiling water with 4 Tbsp. of sugar

For egg wash: 1 egg, whisked with 1 Tbsp. water

Baking sheets oiled and sprinkled lightly with cornmeal

 

Put ingredients into your bread maker in order listed by the manufacturer. Choose the dough cycle.

 

When the dough is ready: Preheat the oven to 400 degrees. Place the dough on a floured board. You may need to knead the dough slightly. Divide the dough into 10 pieces and shape each into a round. I make the hole in the middle with the top of a wooden spoon or you can just do it by hand. 

 

While the bagels are rising—start a pot of water boiling and add the sugar. Drop 2-3 bagels into the boiling water. Boil on each side 30-45 seconds. Remove with a large spatula  and place on your prepared baking sheets. Brush with egg wash. You can sprinkle seseme seeds or cheese if you'd like also. Bake for 15-20 minutes until browned.
