Best Beef and Broccoli

4 servings

 

1 pound boneless sirloin, cut into 3” strips

1/8 cup soy sauce (low-sodium)

1-2 Tbsp. vegetable oil

1 small onion, cut into wedges

1 large head broccoli florets (4 cups) 

1/8 cup of water 

OPT.: water chestnuts

Stir-fry Sauce:

additional 1/8 cup soy sauce

1/4 cup low sodium beef broth

2 Tbsp. cornstarch

1 Tbsp. sesame oil

2 1/2 Tbsp. brown sugar

1 tsp. fresh ginger, grated

1 1/2 tsp. garlic, minced (3 cloves)

Cooked rice for serving

 

 

Stir-fry Sauce: Combine the 1/8 cup soy sauce, broth, cornstarch, sesame oil. brown sugar, ginger and garlic in a small bowl until smooth and set aside. 

 

Toss the sliced meat with the soy sauce. Heat the oil in a large pan and add the beef. Saute’ until the meat is lightly browned. Remove to a plate.

 

Add the onion (and more oil, if needed) and saute’ until lightly browned, remove and add to the plate of beef. Add the broccoli florets to the pan along with the water. Cover a 2-3 minutes to steam and then remove the cover and stir them just until the water evaporates off. 

 

Add the beef, onions and water chestnuts, if using back into the pan with the broccoli. Then add the stir-fry sauce, stirring to coat well. Cook and stir for 2 minutes until the sauce is thickened.
