Black Bean Brownies (vegetarian, GF)

8 x 8 pan

 

 

1–15 oz. can of black beans, drained and rinsed

2 Tbsp. cacao powder (or cocoa powder)

1/2 cup quick oats (use GF oats, if GF)

1/4 tsp. salt

1/3 cup maple syrup

2 Tbsp. sugar (or use 1/2 cup maple syrup instead)

1/4 cup coconut oil (or vegetable)

2 tsp. vanilla extract

1/2 tsp. baking powder

1/2—2/3 cup semi-sweet chocolate chips

OPT: 1/3 cup more chocolate chips to sprinkle on top

OPT: 1/2 cup chopped toasted pecans

 

Preheat oven to 350 degrees. Grease an 8 x 8 inch pan. Place all ingredients in your food processor EXCEPT the chocolate chips and pecans. Process until smooth, stopping once to scrape down sides. I stirred in the chips and pecans while the batter was still in my food processor, but you could also do it in the pan.

 

Spread evenly in your prepared pan. Sprinkle with the chips. Bake 18-20 minutes. The brownies will “set-up” overnight—if they last that long!
