Asian Coleslaw w/Peanut Dressing

Serves 4

 

Peanut Dressing:

3 Tbsp. red wine vinegar

3 Tbsp. vegetable oil

2 1/2 Tbsp. cream peanut butter

1 1/2 Tbsp. soy sauce

1 1/2 Tbsp. brown sugar

1 Tbsp. fresh ginger root, grated

3/4 tsp. garlic, minced

 

Salad:

2 1/2 cups thinly sliced green cabbage

1 cup thinly sliced red cabbage

1 cups shredded Napa cabbage

OPT: 1 red bell pepper, thinly sliced

1 carrot, julienned

3 green onions, chopped

1/4 cup cilantro, chopped

 

Blend all dressing ingredients in a measuring cup and combine all ingredients. Store in the refrigerator. 

 

In a large bowl: Toss to combine all salad ingredients. Serve with peanut dressing.
