Cheri's Lemon Chicken
6 Servings
1 1/2 pounds boneless, skinless chicken breasts
1 tsp. salt
1/2 tsp. pepper
1/3 cup flour
4 Tbsp. butter
2 Tbsp. olive oil
1/4 cup chicken broth
1/4 cup lemon juice
1 Tbsp. garlic, minced
1/3 cup white wine
1 Tbsp. lemon zest
1 tsp. oregano
1/2 tsp. thyme
1/4 cup fresh Italian parsley OR 1 1/2 Tbsp. dried
1 lemon, in slices
Preheat oven to 375 degrees. You might want to slice each chicken breast half into two pieces, then pound chicken breast to 1/4-inch thick. Season with salt and pepper. Dredge in flour. Heat the butter and olive oil in a large frying pan. Brown the chicken breast pieces and place in a 9 x 13 prepared pan.
In a small bowl, stir broth, lemon juice, garlic and white wine, zest, oregano, thyme and parsley. Pour over chicken pieces and add lemon slices around. Bake 30-40 minutes.
