Honey Cinnamon Cupcakes

18 cupcakes

 

Cupcake batter:

1/2 cup unsalted butter, room temperature

1/2 cup sugar

2 large eggs

1 1/2 cups flour

1 1/2 tsp. baking powder

1/2 tsp. baking soda

1 tsp. cinnamon

1/2 tsp. salt

1/2 cup buttermilk

1/2 cup honey

1 tsp. vanilla

 

Honey-Cinnamon Frosting

1 1/2 cup powdered sugar

1/2 cup unsalted butter, room temperature

1/4 cup honey

1/4 tsp. cinnamon

OPT.: few drops yellow food coloring

 

Preheat oven to 350 degrees. Line cupcake pan with liners. Cream butter and sugar until light and fluffy. Add eggs one at a time, beating well after each one. In a small bowl: combine flour, baking powder, baking soda, cinnamon and salt. Add alternately with the buttermilk and honey to the batter. Stir in vanilla. Fill cupcake liners 2/3 full. Bake 18-20 minutes—until cake tests done. Cool completely on rack before frosting.

 

Frosting: Cream all ingredients together. Frost cooled cupcakes.
