Dark Chocolate Brownies w/Mint Filling

9 x 13 pan


1 cup sugar

1/2 cup unsalted butter, room temperature

4 large eggs

1 1/3 cups Hershey Special Dark syrup OR reg. chocolate syrup (16 oz. can)

1 tsp. vanilla

1 cup flour

1/4 tsp. salt

1/2 tsp. baking powder

OPT.: 1/2 cup nuts

Mint Filling: Combine 2 cups powdered sugar, 1 1/2 tsp. peppermint extract and 1/2 cup unsalted butter at room temperature

Chocolate Layer: 1 cup semi-sweet chocolate chips, melted, with 4 Tbsp. softened butter stirred until blended.


For brownies: Preheat oven to 350 degrees. Cream together sugar, butter and eggs. Stir in chocolate syrup and vanilla. Add flour, salt and baking powder and stir until just combined. Stir in nuts if using and pour into prepared pan. Bake 30-35 minutes or until brownies test done in the middle. Cool completely.


Mix mint filling and smooth over cooled brownies. Refrigerate until filling is set. Prepare chocolate layer and smooth over mint filling.
