Ina Garten's Begium Waffles 

8 Waffles

 

 

Light and delicious were how these rated against 5 other recipes! These won the ‘waffle war’ in my waffle cook-off. They can be made gluten free also, I find gluten free flour is dryer, so feel free to add and extra egg if needed for thinning.

 

1/2 cup warm water (105-115 degrees)

1 package yeast

2 tsp. sugar

2 cups warm milk

1/2 cup (1 stick) butter, melted

2 Tbsp. honey

1 tsp. vanilla 

1 + 1/4 tsp. salt

2 cups regular flour or your favorite GF flour

2 extra large eggs

1/4 tsp. baking soda

 

Dissolve yeast in warm water. Add sugar and let stand for 5 minutes

 

Blend milk, butter, honey and vanilla in a large bowl. Add the yeast mixture.

 

Whisk in the flour. Add eggs and baking soda. Refrigerate or let the batter rise and prepare the waffles when the batter is ready.

 

*My findings were that this batter rose like crazy! I was making these for a client at a brunch and spent the drive time stirring the batter down. Luckily, I had my sweetheart doing the driving. I wouldn’t suggest putting this in the refrigerator overnight because I’m afraid you’d have waffle batter taking over.
