Broccoli Cheddar Frittata

One 9" pie pan


2 Tbsp. olive oil

1/2 cup onion, diced

2-3 cups broccoli florets

6-8 eggs 

1/3 cup sun-dried tomatoes

1 cup shredded cheddar

1/2 cup plain yogurt

3/4 tsp.salt

1/2 tsp. pepper

1/3 cup Parmesan, shredded


Preheat oven to 375 degrees. In a medium saucepan, heat oil. Add onion and saute’ until translucent. Add broccoli and heat until it turns color. Cover and simmer 5 minutes. In a large bowl: Whisk eggs, sun-dried tomatoes, cheddar, yogurt, salt and pepper. Add the onion and broccoli. Pour into a greased 9” pie pan. Sprinkle with Parmesan. Bake for 25 minutes or until frittata tests done in the center.
