Chocolate-Covered Katie

If ever there was a cookbook to love—it’s Chocolate-Covered Katie! Filled with over 80 delicious desserts that are not only reduced calorie, mostly healthy ingredients, can be converted to gluten free and also vegan and are filled with whole grains—you can’t help that it makes your heart beat a little faster. I loved that Katie even gives you not only the calorie count, but also the Weight Watcher points! I’ve made several of Katie’s recipes and have also used gluten free flour with no problem. Here are a few of my favorites:

 

Sinless Peanut Butter Cookies: Simply melt in your mouth goodness!! Adding the 1/2 cup of mini chocolate chips made them so indulgent—but still only 2 WW points. Okay, if you want to take these up a notch you can make them a little smaller and make sandwich cookies out of them—Trader Joe’s Speculoos Cookie & Cocoa Swirl—is excellent as a filling, by the way. Double deliciousness. 

 

Chocolate Obsession Cake: Made with either GF flour or regular—turns out great! You might want to use cacao powder (a Mayan superfood) instead of regular cocoa powder. This cake is for a single layer, but it is chocolatey enough even for a chocoholic. It’s easy to stir-up without an electric mixer and I haven’t had it fail once and I’ve made it A LOT since my clients are totally hooked on it!

 

4-Ingredient Chocolate Frosting or Mousse: This is so simple and is great for the above mentioned cake. You don’t want to feel guilty eating that cake, after all! The big secret…full-fat coconut cream. Who knew?! The frosting must be kept cool to keep the coconut cream firm, which is the only downside, so you’ll need to refrigerate the frosted cake or you can just put a dollop of frosting on your cake when you take a slice. 

 

Blueberry Morning Baked Oatmeal: Okay—I’m not a total chocoholic. Who knew you could have dessert for breakfast! Full of blueberries and oats—reminded me a little of a cobbler with oats for the crust. I haven’t tried other berries, but I’m sure they’d be just as wonderful.

 

Not sure you’re ready to buy another cookbook?! Lucky for you Katie also has a blog by the same name—Chocolate Covered Katie—so you can try some of her recipes before you decide that you must add one more cookbook to your collection. You might want to try her Peanut Butter Buckeye Brownies—they were to die for. I’d suggest you freeze half of them though or you just might eat the whole pan in one day! That’s when I knew I had to add just one more cookbook to my expansive collection….
