GF Potsticks (Dim Sum)

Makes 24

 

Filling:

3.5 ounces shitake mushrooms, finely chopped

1/2 cup finely grated carrots

1/2 cup shredded Napa cabbage

1/4 cup finely chopped red bell pepper

2 Tbsp. thinly sliced green onions

2 tsp. minced fresh ginger

1 Tbsp. cilantro leaves, chopped

1 Tbsp. chives, minced

2 garlic cloves, minced

1 1/2 Tbsp. GF hoisin sauce

1 Tbsp. GF soy sauce

1 egg

2 tsp. sesame oil

1 tsp. salt, 1/4 tsp. pepper

 

Toss all ingredients together and chill while you are preparing the wrappers.

GF wrappers:

1 cup white rice flour

3/4 cup tapioca flour

pinch salt

1 tsp. xantham gum

2 Tbsp. vegetable oil

2/3 cup boiling water

 

Blend dry ingredients. Stir in oil and boiling water. Knead a few times until dough is smooth. Divide into quarters. Work with on quarter dough at a time and keep the remaining dough covered to keep it from drying out. Divide the quarter into six equal pieces. Roll each into a 3-inch round. Place a heaping teaspoon of filling in the center. Wet one half edge with water and fold and seal. Place on a steaming rack sprayed with non-stick spray and steam for 10-12 minutes.

 

Dipping Sauce: 

2 Tbsp. soy sauce

1 Tbsp agave (or honey)

1/4 Tbsp. rice vinegar

1/2 tsp. sesame oil

few drops chili paste

 

Blend and serve with steamed potstickers!
