Quinoa Pilaf w/Pistachios 

(GF, vegan, vegetarian)

4 servings


1 3/4 cup vegetable or chicken broth

3/4 cup quinoa, rinsed

1 tsp. olive oil

1/3 cup onion, diced

1 garlic clove, minced

1/4 tsp. salt

1/8 tsp. freshly ground pepper

1/2 cup toasted unsalted pistachios,* roughly chopped

Dressing: 1 Tbsp. olive oil whisked with 2 tsp. red wine vinegar


In a medium saucepan add the broth and the quinoa. Heat to boiling, turn down and simmer for 15 minutes. 


Meanwhile, heat the oil in a medium saute’ pan. Add the onion and saute’ for 4-5 minutes until onion is browned, add the garlic and cook another minute. Stir in the cooked quinoa, along with the salt and pepper. Add the toasted pistachios and the dressing and toss lightly. Serve immediately.


*To toast pistachios—Bake pistachios at 350 for 10-12 minutes until fragrant
