Glazed Green Beans w/Caramelized Shallots

(4 servings)

 

2 Tbsp. unsalted butter 

1 large shallot, diced

3/4 cup water (just enough to cover beans)

1/4 cup sugar

1 tsp. salt

1 pound of green beans, trimmed

1/4 tsp. freshly ground pepper

Garnish: 1/4 cup toasted slivered almonds 

 

Melt the butter in a saute’ pan and add the shallot and saute’ until it turns a golden brown. Add the water, sugar and salt and stir to dissolve the sugar. Add the green beans, bring to a low boil and cover. Cook for 5-7 minutes covered. 

 

Remove the cover and continue cooking until the water cooks off almost completely, leaving a glaze on the green beans and shallots. Give the beans a sprinkling of pepper and garnish with almond slivers to serve.
