Chocolate Cherry Cookies w/Pecans

Makes 3 dozen cookies

 

1 cup flour

1/4 cup cacao (or baking cocoa)

1 tsp. baking powder

1/2 tsp. salt

1/2 cup unsalted butter, room temperature

1 cup white sugar

1 large egg

1 1/2 tsp. espresso powder

1 tsp. almond extract

1/2 cup mini chocolate chips

1 cup dried cherries

1 cup chopped pecans

 

Preheat oven to 350 degrees. In a medium bowl, blend together the flour, cacao, baking powder and salt and set aside.

 

In a large bowl, cream the butter and sugar together. Add the egg, espresso powder and almond extract. Mix until dough is smooth. Stir in the flour half at a time and mix until it’s incorporated. Stir in the chocolate chips, dried cherries and pecans. 

 

Drop by rounded tablespoon to prepared cookie sheets. Bake 10-12 minutes. Let cool on cookie sheet for 2 minutes before transferring to a cooling rack.
