Maple Oatmeal Raisin Cookies
Makes 4 dozen
1 cup unsalted butter, room temperature
4 Tbsp. canola oil
2 1/2 tsp. maple extract (Mapleine)
2/3 cup sugar
1 cup brown sugar
2 large eggs
4 cups old-fashioned oats combined with 1/3 cup hot water
2 cups flour
1 1/2 Tbsp. cinnamon
1/2 tsp. ground nutmeg
1 tsp. baking soda
1 tsp. salt
1 cup raisins
1 cup chopped walnuts
In a large bowl, combine the butter, canola oil and maple extract. Add the sugars and mix until smooth and light. Add the eggs one at a time and blend into dough. Add the oatmeal and water. Mix until incorporated.
In a medium bowl, combine the flour, cinnamon, nutmeg, baking soda and salt. Stir into the cookie dough until smooth. Stir in the raisins and walnuts and combine until they are spread evenly throughout the dough.
Preheat the oven to 350 degrees. Chill the cookie dough for 10 minutes while the oven is heating. Drop by rounded spoonfuls onto prepared cookie sheets. Bake 11-12 minutes or until golden brown.
