Crustless Apple Pie; low-fat, GF*,Paleo**

one—9” pie

 

6 medium apples (I used Macintosh)peeled, cored, sliced

1/4 tsp. salt

1 tsp. lemon juice

2/3 cup sugar, divided use

1 tsp. cinnamon, divided use

1/4 tsp. freshly ground nutmeg

1/2 cup flour*

1/4 cup unsalted butter, softened

1 large egg

 

Preheat oven to 350 degrees. Spray pie pan with non-stick spray. Toss apples with salt, lemon juice, 1/3 cup sugar, 1/2 tsp. cinnamon and nutmeg. Pour into pie pan.

 

In a small bowl blend flour, butter, 1/2 tsp. cinnamon and the egg. Smooth batter over the top of apples. Bake 55-60 minutes until apples are soft and top is browned.

 

*GF—substitute Bob’s 1-to-1 GF flour or your favorite

**Paleo version, use coconut sugar; coconut flour and 2 eggs, butter is okay, but from grass-fed cows
