Dark Chocolate Pie* (GF, Vegan)
one 9” pie (8 servings)
Crust:
3/4 cup raw almonds
1/4 cup coconut oil, melted
3 Tbsp. maple syrup
1/4 tsp. salt
1/2 cup oat flour
1 cup rolled oats
Filling:
1 can coconut cream, chilled (Trader Joe’s)
1 1/2 cups or 340 grams of dark chocolate (I got mine at Trader Joe’s)
2 Tbsp. maple syrup
pinch salt
1 tsp. almond extract
Crust: Preheat oven to 350 degrees. In your food processor, process almonds until coarse. Add the oil, syrup, salt and oat flour and process until smooth. Then add the rolled oats and process a few pulses. Press into a greased 9” pie pan. Bake 10-12 minutes. Cool for 30 minutes before filling.
In a double boiler: Pour in coconut cream, syrup, and salt. Add the chocolate and heat until chocolate is melted. Remove from heat and stir in almond extract. Pour into cooled pie crust. Refrigerate until set.
