French Onion Soup 

Serves 4

 

2 Tbsp. vegetable oil

4 cups thinly sliced onions

1 tsp. sugar

1/4 tsp. pepper

4 cups beef broth

4 sliced French bread

1/2 cup Gruyere cheese, shredded

4 oven proof bowls

 

Heat oil in a large saucepan. Add onions, sugar and pepper and cook on low heat until onions are caramelized—15 -20 minutes. Divide among your 4 bowls.

 

Just prior to serving: top each bowl of soup with a slice of French bread and sprinkle with cheese. Broil until cheese is melted and lightly browned on the edges. Serve immediately!
