Fresh Raspberry Dressing

Approx. 2 cups

 

1 cup fresh raspberries 

4 Tbsp. lemon juice

4 Tbsp. red wine vinegar

2 Tbsp. sugar

1/4 tsp. salt

1/2 cup olive oil

 

Combine and blend with a hand blender until smooth. This dressing can be kept in the refrigerator for up to a month—just shake before serving over salad.
