Fresh Strawberry Pie
2 pounds of fresh strawberries, cleaned, hulled and dry
3/4 cup sugar
1/2 cup water
3 tablespoons corn starch
1 teaspoon vanilla
1 tablespoon of butter
*1 baked single pie crust
(Delicious topped with whipped cream!)
Size your berries and place them into the baked pie crust—removing any strawberries with spots or are smaller and mash to make one cup of crushed berries for the glaze.
Pour the sugar into a medium size saucepan and blend the cornstarch into it. Add the crushed berries and the water. Stir to blend. Heat to boiling and cook one minute. Remove from heat and stir in the vanilla and the butter. Let cool for 15 minutes before spooning over the arranged strawberries.
Top with whipped cream and enjoy! This pie is best eaten the day it was prepared. If your strawberries are really juicy the crust might get soggy by the next day—I just eat the strawberries out of the crust then—my ‘diet’ version.
