One large loaf


3/4 cup pineapple juice (1 small can)

1 egg

2 Tbsp. vegetable oil

2 1/2 Tbsp. honey

1 tsp. vanilla

1/2 tsp. coconut extract

3/4 tsp. salt

3 cups bread flour

2 Tbsp. powdered milk

1 package Red Star Yeast*


Mix together (I use the dough cycle on my bread maker) and then knead 8-10 minutes until the dough is smooth. Place the dough ball in a large greased bowl. Cover and let rise in a warm place. Punch down and shape into a prepared loaf pan. Preheat the oven to 375 degrees. Let rise until the bread is about an inch above the top of the pan. It will continue to rise in the oven. Place in the center rack of the oven and bake 20-25 minutes. If you like a very soft crust, you can brush the bread lightly with some melted butter. 


*Any powdered yeast is fine, but I have had the best results with Red Star.
