Healthy Almond Butter Cookies

(Gluten free and diabetic options)

24-28 cookies


1 cup almond butter

1/4 cup applesauce

1 tsp. almond extract

3/4 cup xylitol or sugar

1/4 cup, plus 2 Tb. flour of choice. (I used 1/4 cup reg. flour, 2 Tbsp. almond flour.)

1 1/2 tsp. baking soda

1/8 inch salt

OPT: 1/2 cup mini semi-sweet chips


Preheat oven to 350 degrees. In a medium bowl, mix the almond butter, applesauce and extract. In another bowl, stir together the sugar, flour, baking soda and salt. Stir in the chips if using. 


Form into 1” balls and place on prepared baking sheets. Press down to flatten. Bake 8-10 minutes. Let cool on cookie sheets a few minutes before moving to your cooling rack.
