Oatmeal Cookies (diabetic, low cal,*GF)

40 cookies—78 calories, diabetic exchanges, 1/2 carb & 1 fat


1/3 cup canola oil

3/4 cup light brown sugar 

1 egg

1 egg white

1 tsp. vanilla

1 1/2 cups flour*

1 tsp. ground cinnamon

1/4 tsp. nutmeg

1 tsp. baking soda

1 1/2 cups old fashioned oatmeal*

1/3 cup semi-sweet mini chips

1/2 cup chopped walnuts


Preheat oven to 350 degrees. In a large bowl, combine the oil, brown sugar, egg, egg white and vanilla. Beat ingredients until combined. In a small bowl, combine the flour, cinnamon, nutmeg and baking soda. Add a third at a time to wet ingredients until well blended. Stir in the oatmeal, chocolate chips and walnuts.


Drop by rounded teaspoons onto prepared cookie sheets. Bake 10-12 minutes until cookies are lightly browned. 


*For gluten free--substitute Bob's Red MIll 1-to-1 flour and make sure your oats are labled gluten free. You can find the GF old fashioned oats at Trader Joe's.
