One Bowl Chocolate Cake w/Chocolate Buttercream

9 x 13 pan

 

1 3/4 cups all purpose flour

2 cups sugar

3/4 cup baking cocoa (or cacao)

2 tsp. baking soda

1 tsp. baking powder

1/2 tsp. salt

2 large eggs

1 cup canola oil

1 cup buttermilk

1 cup hot coffee (or boiling water)

2 tsp. vanilla

Frosting: 1/2 cup unsalted butter, softened

               2 cups powdered sugar

               1/4 cup cocoa

               1 1/2 tsp. vanilla

               pinch salt

               3-4 Tbsp. milk

 

 

Preheat oven to 350 degrees. In a large bowl, whisk the dry ingredients: flour, sugar, cocoa, baking soda, baking powder and salt. Stir in the eggs, oil and buttermilk. Add the hot coffee (or water) and the vanilla. Stir until combined, using a spatula to make sure there is nothing on the bottom of the bowl.

 

Pour into greased cake pan. Bake 35-40 minutes, until the cake tests done with a toothpick. Cool completely before frosting. 

 

Frosting: In a medium bowl, beat the butter, sugar, cocoa and vanilla until smooth. Add the milk 1 Tbsp. at a time until frosting is at the right consistency. Spread on cooled cake.
