Parmesan-Garlic Roasted Cauliflower

4-6 servings


1 head cauliflower, cut into florets

1 medium sweet onion, thinly sliced

1 Tbsp. garlic, minced

3 Tbsp. olive oil

1/2 tsp. salt

1/4 tsp. freshly ground pepper

4-6 sprigs fresh thyme

1/2 cup grated Parmesan


Preheat oven to 425 degrees. Spray a large rimmed baking sheet with nonstick spray. Toss the cauliflower, onion slices, minced garlic and olive oil together on the baking sheet. Sprinkle with salt and pepper. Top with the thyme sprigs. Roast 35-40 minutes. Stir and then sprinkle with the grated Parmesan. Bake an additional 10 minutes or until the cauliflower is tender.
