Pecan Pie Truffles


2 1/2 cups pecans, toasted and finely chopped

1 cup graham cracker crumbs (8 whole)

1 cup dark brown sugar

1/2 tsp. salt

2 Tbsp. maple syrup

1/4 cup dark corn syrup

2 Tbsp. unsalted butter

1/4 cup brandy

1 tsp. vanilla


Ghirardelli dark chocolate melting wafers

pecan halves for garnishing tops of truffles


Combine first 9 ingredients. Shape into 1 inch balls and refrigerate for an hour. Melt chocolate wafers and dip each ball in chocolate and top immediately with a pecan half.
