Potato Latkes

Serves 4

 

These are so good you’ll be tempted to eat some while they’re being made—so don’t blame me when you don’t end-up with 4 servings!

 

1 pound potatoes, peeled, grated, and placed in a bowl of cold water

1/2 cup chopped onion

1 large egg

1/2 tsp. salt, plus more to sprinkle on top when prepared

dash pepper

1/2—3/4 cup olive oil, for frying

 

Drain and spread potatoes onto a kitchen or pour into a colander and squeeze to remove the water—a handful at a time—putting the drained potatoes into a large bowl.

 

Add the onion, egg, salt and pepper and toss to blend.

 

Heat the oil. Scoop out 2 Tablespoons of potato mixture and put into the hot oil, spreading to a 3 inch round. Brown 5 minutes on each side. Remove to paper towels to drain off any oil. Sprinkle lightly with salt and serve immediately.
