Spiced Peach Jam

3 pints

 

4 cups peaches, peeled, pitted, sliced.

2 Tbsp. lemon juice

3 1/2 cups sugar

2 tsp. lemon zest

3 Tbsp. powdered pectin

1 1/2 tsp. finely chopped crystallized ginger

1/4 tsp. freshly grated ginger

1/4 tsp. freshly grated nutmeg

1/4 tsp. cinnamon

1/8 tsp. ground cloves

1/8 tsp. ground allspice

 

Prepare your jars and heat your kettle for the boiling water bath. 

 

Put the peaches in a large saucepan and roughly mash them. Add the lemon juice and bring to a boil. Stir in the pectin and return to a boil, stirring constantly. Slowly add the sugar, lemon zest, ginger and spices. Bring back to a boil, stirring constantly for one minute. 

 

Pour into prepared jars leaving at least a 1/4” headspace, spoon off any foam. Wipe off the tops, put the lids and bands on. Process 5 minutes in a boiling water bath.
