Tropical Rice
6-8 Servings
2 cups rice
1 1/4 cup chicken broth
1 cup coconut milk

1 cup crushed pineapple
2 Tbsp. soy sauce
1 tsp. sesame oil
1 tsp. brown sugar
1/4 cup green onions, chopped
OPT: garnish of toasted coconut or sliced almonds
In a medium pan, cook the rice with the broth and coconut milk following package directions.
In a small bowl, combine the pineapple, soy sauce, sesame oil and brown sugar. Fold into the rice along with the green onions. Garnish with toasted coconut or sliced almonds before serving.
